There’s something about fresh basil that instantly makes me think of summers in the garden. Even with all the joys of autumn rolling round, it’s still nice to have a bite of warmer weather and sunshine. Green, herbaceous, and savory, my Basil Pine Nut Pesto is perfect for capturing the spirit of the summer!
Filled with fresh green basil, olive oil, pine nuts, and garlic, this simple blend can be used as a marinade, dressing, or sauce with anything from meats & fish, vegetables, or potatoes.
Basil Pine Nut Pesto
makes 1 cup
2 ounces fresh basil (about 2 packed cups)
1/2 cup pine nuts
1/2 cup extra virgin olive oil
2 cloves garlic, peeled & minced
salt & pepper to taste
In the bowl of a food processor combine all the ingredients. Pulse to start to blend. Pause, and wipe down the sides. Then blend for just about a minute until smooth. Add salt & pepper to taste.
Store in a covered container in the fridge for up to 3 days.
