We love a good cocktail in this house! Cranberry ‘Cape Codders’ with a squeeze of lime; Mimosas with orange juice; Neon green Melon Balls. All delicious! Our favorite drink to serve to a crowd, however, is a large icy pitcher of Mojitos – not the classic rum based drink, but rather the ever-refreshing vodka mojito!
I know, I know…some of you will cry foul that I even mentioned using vodka in place of the traditional rum in a mojito. Hold on to your hat, because it gets worse! Traditionalists, you may want to go browse another post because we are going to get even more wild & crazy! Soda water? Nah, lemon-lime soda please. Sugar syrup? Nope, I’m watching my figure so we are going to use stevia (or Splenda). Is everyone still breathing here? Good. Because these mojitos, even with all the changes, are deliriously good and extremely simple to make.
Fresh limes and mint leaves are muddled with the stevia in a large pitcher. Add ice, soda, and copious amounts of vodka and you now have a summer’s day in a glass. I have always been impressed with how quickly these refreshing cocktails are sipped down. So, a toast to Saturday night! Drink up to the kids who are in bed and actually asleep! Toast to knowing summer will be here in just four months! I’m drinking to that… Cheers!

Vodka Mojitos
makes 4 tall drinks or 6-8 tumblers
4 limes plus more for garnish
1/2 cup fresh mint leaves plus more for garnish
2 tablespoons stevia in the raw
1 cup quality vodka
4 cups regular or diet lemon lime soda
A bunch of ice
Wash the limes under warm water and dry.
Cut the limes in halves and then quarters. Squeeze the juice directly into a large pitcher and toss the limes in.
Wash and dry the mint leaves. Strip them from their sprigs and bruise them in your hand (squish them). Add to the pitcher.
With a muddler or the handle of a large wooden spoon, “muddle” or smash the limes and mint together. This brings out the oils and essence of the lime and mint.
Add stevia, vodka, and soda. Mix well. Fill any remaining space in the pitcher with ice. Stir gently to combine.
Pour and garnish with lime rounds & mint.
