I try to hit the gym four to five times a week. Although I enjoy it most (OK…some) of the time, there are days where I have to convince myself that attending a killer Insanity class, or shaking what my mama gave me at Zumba is the right thing to do at nine o’clock each morning. Sometimes I need to give myself a bribe. A promised reward. SOMETHING on those slow and groggy days to get my butt moving and into a pair of workout leggings.
On those days it is the thought of having a post workout snack that carries me through. Chocolate, yup yup. Peanut butter, of course. Milk, sure. Bananas, Mmmm! My Chocolate Peanut Butter Smoothie is a delicious and nutritious post-workout snack, small meal, or even a dessert! It’s also a fabulous quick vegan protein smoothie recipe for you or the kids!
Chocolate Peanut Butter Smoothie
makes 12 ounces
1 cup 2% or low fat milk (or milk alternative)
1 cup crushed ice
1/2 ripe to overripe banana
1-2 tablespoons all natural peanut butter or peanut butter of your choice
1-2 tablespoons cocoa powder (I prefer unsweetened)
stevia or sweetener of your choice
optional add-ons: A scoop of protein powder, baby kale/spinach greens, or coconut flakes
In a blender, combine the ingredients in the following order for best results. Ice, milk, banana, cocoa powder, peanut butter, and sweetener. Blend on high for 2 minutes. Taste and adjust the sweetener and/or chocolate peanut butter levels to taste.
