Burrata is a staple cheese in my fridge, because it pairs with so many ingredients! This is a spectacular light salad appetizer recipe that overflows with contrasts of flavor & texture!!
Fresh Strawberries
Burrata Cheese
Cantaloupe
Lime Juice
Tomatoes
Basil
Mint
Fresh Cherries
Watermelon
Nectarines
Olive Oil
Honey
Thyme
Salt
Champagne Vinegar
Shallot
1. Grab a couple of ripe nectarines (or peaches!) and slice into 1/4 inch pieces.
2. Add a bit of honey, lime juice, and olive oil to the bowl of sliced nectarines. Sprinkle on freshly torn mint & lemon thyme on top. Stir and reserve.
3. Cube the watermelon into 1 inch chunks and slice the cantaloupe thinly. Slice the tomatoes into 1/8 pieces, halve the strawberries, and pit the cherries.
What people love about a burrata is what’s inside! Filled with a beautifully creamy stuffing of mozzarella shreds or Ricotta, that has been soaked in cream. YUM.
Drizzle a quick vinaigrette of shallots, honey, and champagne vinegar on top. Garnish with herbs & edible flowers.
