Fresh Strawberries

Feta Cheese

Cooked Beets

Lime Juice



Fresh Cherries

Plain Greek Yogurt


Olive Oil




1. Combine the feta cheese with a little bit of thick Greek yogurt, & plenty of extra virgin olive oil in the bowl of a food processor.


2. Start with several short pulses and continue to mix until smooth. Add in your favorite fresh herbs, like dill or thyme, as well as salt and pepper.  Reserve and Chill.


3. Chop your fresh strawberries, cherries, cucumbers, and roasted beets. Toss with a little olive oil, honey, & lime juice.


4. Using a large plate or medium sized platter, dollop and "swish", the feta spread with a large spoon

Arrange the mixed marinated fruit + beets beside spread


Garnish with fresh herbs, edible flowers, and crushed pistachios. Add a side of toasted rustic bread, and you have a fancy breakfast to start your day!
